Ricotta Stuffed Pasta Shells

Ingredients
1 Box Jumbo Pasta Shells30 ounces of Whole Milk Ricotta Cheese8 ounces Part-Skim Mozzarella cheese, grated1 Egg1 teaspoon Salt1/2 teaspoon Black Pepper, groundPinch of Ground Nutmeg3 Tablespoons of Parsley, chopped
Directions
Cook pasta shells according to package directions; drain shells.

In a large mixing bowl combine ricotta cheese, 1 cup of mozzarella cheese, egg, salt and nutmeg until combined. Stuff into cooked and drained pasta shells.

Layer in baking pan with your favorite pasta sauce and top with remaining mozzarella. Cover with foil and bake 30 minutes or until heated through.

    I tried it, but did some substitutions. I left out the eggs, but added a box of drained spinach. I also omitted the nutmeg and used lowfat cottage chees. It was delicious! - 1/17/10
