Nacho Casserole

Ingredients
1.5 cups of baked tostitos1 16 oz jar of medium salsa1 cup of shredded Low Fat Cheddar or Colby Cheese1 cup of shredded Queso Asadero Cheese1 can of black olives1 diced sweet red pepper1 lb of lean ground turkey1 pkg of Old El Paso reduced sodium taco seasoning
Directions
Heat oven to 375degrees and Coat a 13x9 inbh baking dish with nonstick cooking spray.

In a large skillet cook turkey, peppers and seasoning (follow instructions on seasoning). Break up any clumps of meat and cook until peppers are soft and meat is done - about 7 minutes.

Place the chips into a plastic bag and crush. Use about 2/3 of mixture on bottom of pn.

Add salsa, olives and cheese to the meat (leaviing 1/2 cup of the queso for the top.

Put remaining chips and cheese on top and bake for 30 minutes. You can add some sliced green onions for decoration. Makes 6-8 servings.
