Spinach Gratin

Ingredients
1 medium onion, chopped2 tbs canola oilSpinach, frozen, 250 gramsFeta Cheese, 100 grams Brown Rice, medium grain, 1 cup , cookedEgg, fresh, 1 medium Parsley, 2 tbspSalt, 1 dash Pepper, black, 1/4 tbsp 1 cup light cheddar cheese
Directions
Mix egg and rice well. Put in a round ovenproof dish. Flatten with a spoon.


Pour canola oil in a skillet, add chopped onion, cook it until soft.


Squeze the excess water from spinach and add into the skillet. Cook for 2 minutes.


Add feta cheese, parsley, salt, pepper into the skillet. Mix well, and then pour on top of the rice.

Sprinkle with the light cheddar cheese, and put it into the oven at 200 C degree until the cheese becomes golden brown.

    This was delicious! I made it for Easter dinner and my mother was so impressed! I added garlic powder to the rice mixture and used garlic & herb feta. I also substituded mozz. for cheddar simply b/c we had a lot of other dishes on the table w/ cheddar. Superb! - 4/8/07
