Bryanaas Breakfast Quiche

Ingredients
1 Cup of Egg Beaters 1/4 Cup skim milk, 1/4 Cup diced green peppers, 1/4 Cup diced onion, 3 oz of reduced fat pork sausage (or bacon), 1/4 Cup of diced Mushrooms, 1/2 Cup of shredded Colby Jack cheese, 1/3 Cup of drained frozen spinach, 1 pie crust home made or store bought
Directions
Pre-bake the crust just lightly in 325 degree oven. While Crust is baking brown up the onions, peppers, mushrooms and sausage. Place eggs, cheese and spinach in bowl and mix with salt and pepper. Add the sausage mixture Hint: Let the sausage mixture cool a little before adding it to the egg mixture to prevent the eggs from cooking. pour the mixture into the cooked pie shell and bake at 375 degrees for 40-45 minutes or until knife comes out clean. I made this into 4 servings but they were pretty good size servings. I think you could easy make it 6 servings if it is your main dish. Note: My Husband likes it spicy so I added some Franks hot sauce and Jalapeno peppers to one that I made.
