Super filling veggie rice

Ingredients
14 Baby carrots - cut into circles1 Cup of frozen peas1 Cup of frozen corn1/2 Cup of Minute Rice (1/4 cup uncooked)1 Tbsp of chopped fresh parsley2 Tbsp of chopped onion1/2 Cube of Chicken BouillonPam cooking spray
Directions
Makes 2 servings - About 1.5 cups each serving

Cut the carrots (each into about 5 sections) and cook in water. When they are almost fully cooked, throw in peas and corn. Meanwhile, cook minute rice and, when there is barely any water left, add chicken bouillon and parsley, then allow rice to absorsb remaining water. Put chopped onions in a small microwavable container and spray with two servings of Pam cooking spray. Cover container with a wet paper towel and microwave for 1.5 minutes on high. Strain veggies and mix in rice and onions!

p.s. You can pretty much add any vegetables to this recipe to add volume without adding fat!
