Yellow Rice Pilaf

Ingredients
4 tsp olive oil1 lg clove garlic, minced1/2 lg onion, minced1 lg stalk celery, minced1/2 c. red pepper, minced1/2 c. carrots, minced1 c mushrooms, minced1 c white rice, (uncooked)2 c fat-free chicken broth1 tsp cumin1 tsp tumeric1/2 tsp curry1/2 tsp coriander
Directions
Saute vegetables in olive oil until onion is transparent. Add rice and saute for 2 minutes more. Add chicken broth, cover and simmer until rice is cooked and there is no liquid left.

Makes approx. 8 1/2-cup servings.
