Quinoa Stuffed Peppers

1 c. (dry) quinoa1 can (1/5 c.) black beans1.5 c. salsa3 large bell peppers
Cook quinoa according to package directions. When fully cooked, combine with black beans and salsa.
Cut bell peppers in half lengthwise, remove stems and seeds. Place on baking sheet and stuff each half with quinoa mixture. Roast in oven at 350 for 20-30 minutes or until done.
