linguini with mussels

Ingredients
olive oil - 1 -2 tbsp2 cans canned diced tomatoes1 cup white wine1 tbsp garlic1 tbsp red pepper flakes (or to taste)box uncooked linguinibag raw mussels, cleaned1 cup shredded carrots2 handfuls baby spinach
Directions
makes 5-6 large portions

Heat olive oil over large pan. Add garlic and red pepper flakes - saute quickly until fragrant. Add white wine and let come to a boil. Add tomatoes with juice and boil for a few minutes. Add carrots and cook for a few minutes. Add spinach.

Cook linguini as directed on package.

Five minutes before pasta will be done add mussels to sauce and put lid on. Cook mussels until they open - discard unopened ones.

Serve mussels and sauce over linguini. Good with garlic bread, of course!
