Pork & Green Chili Stew

2 lb. lean pork loin, cubed12 raw new potatoes (or 6 Irish potatoes), cubed2 TB flour1 TB oil4 cups chicken broth3 cans (4 oz. each) diced green chilis2 large stalks of celery, chopped1 can (about 2 cups) diced or stewed tomatoes2 tsp cumin1 tsp oregano
1. Toss the cubed pork in the flour to coat.
2. Lightly brown the pork in hot olive oil
3. Add all other ingredients. Bring to a slow boil, then cut the heat back to a simmer. Cook 50 minutes to 1 hour (until meat & veggies are tender).
You could serve this over rice or with tortillas on the side, but it's filling by itself as well.
