Ingredients
1/4 C egg substitute (I use Kirkland)1 large fresh mushroom sliced thin2 tbs chopped onion1 tbs chopped red pepper1 tsp smart balance light marj1 slice fat free cheese
Directions
saute onions, pepper, and mushrooms in 1 tsp smart balance. reduce heat to low and add egg. Cook to desired consistency add cheese. (I add DASH [tomato and basil] seasoning). Any other seasoning you like.
