Cottage Cheese Casserole (Lasagna)

Ingredients
1/4 cup chopped mushroom1/4 cup chopped onion1/4 cup chopped celeryabout 1/2 cup frozen spinach1 clove garlic, minced1/4 tsp cumin1/4 tsp chili pepper (optional)2 cups water1/4 cup tomato paste1.5 cups whole wheat pasta (fusilli)1 teaspoons salt1 cup nonfat cottage cheese2 tablespoons grated parmesan cheese
Directions
1. Saute first 5 ingredients in a large skillet.
2. Stir in next 6 ingredients and simmer until macaroni is tender, about 20 minutes.
3. Mix last 2 ingredients together in separate bowl.
4. Put 1/2 the pasta mixture in a greased casserole dish.
5. Top with 1/2 the cottage cheese mixture.
6. Repeat layers.
7. Bake at 350 degrees for 40 minutes.
