2 Tbsp Canola Oil1 large red pepper, diced4 cloves garlic, chopped12 oz mixed vegetables3 cups (about 8 oz) chopped mushrooms1 cup chopped shiitake mushrooms4 cups cooked rice (preferably brown)Juice of one lime1 tsp salt
Heat canola oil in large skillet and add garlic, peppers, vegetables, and mushrooms. saute for about 5 minutes and add rice. Toss until well blended and add sesame oil, sesame seeds, salt, and lime juice. Toss and saute for 3-5 minutes more.
Makes about 8 servings of 1 cup each.
