Ingredients
Grilled Chicken Breast, 9 ouncesBrown Rice, medium grain, 2 cups6 inch corn tortillas, 6 servingBell peppers, 1/2 cup, choppedYellow Sweet Corn, Frozen, 1/2 cup kernelsBeans, black, 1/2 cupSalsa, 1/4 cupSour Cream, reduced fat, 1/4 cupCream of chicken soup, 1 cupCilantro, raw, 1 tbspCheddar, Low Fat, 1 cup, shredded
Directions
Put cooked brown rice on bottom of casserole dish. mix grilled chicken, beans, corn, peppers, sour cream, 1/2 cream of chicken soup, cliantro, and 1/2 salsa. roll 6 tortillias with mixture. place onto of rice. cover with remaining cream of chicken soup and remaining salsa. cover with cheese.
Bake at 350 for 30 minutes
