Easy Microwave Chocolate Pudding

Ingredients
1/2 cup white sugar1/3 cup unsweetened cocoa powder, sifted3 Tbsp. cornstarch2 cups skim milk1 1/2 Tbsp. vanilla extract
Directions
In a microwave safe bowl, whisk together sugar, cocoa, and cornstarch. Whisk in a little milk at a time so there are no dry lumps. Cook in microwave for 3 minutes on high. Stir, then cook at 1 minute intervals, stirring between cooking times, until shiny and thick. Stir in vanilla.
Place a piece of plastic wrap on surface of pudding and chill. Serve cold.

Makes ~ 10 1/2 cup servings

    Easy and quick. I substituted stevia sweetner to cut back on calories and used light soy milk. My finicky daughter even asked for seconds. The intensity of the chocolate can be adjusted to suit the taste of the eaters. - 3/27/09
