Codfish en Papillote

Ingredients
3 Cod fillets1 large tomatoe1 lemon1 tsp olive oilfresh herbs salt and pepper to taste
Directions
Place the cod fillet on a piece of aluminum foil. Sprinkle with fresh herbs, salt pepper and a bit of olive oil. Cover with thinly sliced tomatoes and lemon. Close the foil tightly, leaving some air inside , and scrunch the ends.
Cook in 400 F oven for 18 mins or until cooked through.
Makes 3 servings.
