Pan – Grilled Bruschetta Pomodoro

1 large tomato, seeded and diced fine¼ tsp lemon juice½ tsp fresh thymeSalt and pepper, to taste4 small or 2 large bias-cut slices baguette bread2 tsp olive oil1 large clove garlic, halved
Preheat a grill pan over high heat.
Combine chopped tomato, lemon juice, thyme and seasoning in a small bowl, set aside.
Lightly brush each side of the baguette slices with olive oil.
Place slices on the grill pan and cook without moving 1 minute.
Flip slices and cook one minute further, until toasty brown.
Immediately rub one side of each slice with the cut side of garlic.
Top each slice with equal amounts of the tomato mixture and serve immediately.
