Bev's Quiche

Ingredients
2 cups egg substitute1 sweet red pepper, chopped1 medium onion, chopped1 c spinach, thawed1/4 c fat free shredded cheese1/4 c reduced fat shredded cheese
Directions
Saute onions and red peppers in frying pan sprayed with vegetable or olive oil until onions are translucent. Cool. Mix all ingredients and pour into large piepan sprayed with oil. Bake at 350 degrees for 25-30 minutes - until toothpick comes out clean. Cut into 5 servings.
