Chicken in Wine Sauce

Ingredients
4- 4oz chicken breasts, cut in half1/4 tsp salt1/4 tsp pepper2 tsp olive oil1 small onion sliced1 cup sliced mushrooms4 oz artichoke hearts1 Tbs tarragon1 cup chicken broth1 1/2 cups white wine2 Tbs cornstarch
Directions
Season chicken with salt and pepper
Heat oil in skillet and brown seasoned breasts on both sides over medium heat
Add onion and cook 3 minutes
Add mushrooms, cover and cook 15 minutes
Remove chicken and vegetables to a platter
Add artichoke hearts, tarragon, chicken broth, and 1 cup of wine to the same skillet and bring to a boil
Allow to simmer 15 minutes
Stir cornstarch and remaining wine in a small bowl
Slowly stir cornstarch mixture into broth mixture and continue to simmer until sauce thickens
Pour sauce over chicken and vegetable and serve
