Nicki's Lunch Quinoa

Ingredients
1 Tsp olive oilI medium onion25g Pine nuts1 cup of Quinoa125g Chick peas1 carrot1/2 green Bell Pepper1/2 medium Zucchinin1tsp Cumin and Paprika1pint water
Directions
Chop the onion, carrot, green pepper, Zucchini into small pieces.
Heat olive oil in a saucepan, add onions and Quinoa, stir and fry lightly for 3 mins.
Add the chopped vegetable, chickpeas and spices continue stirring for a couple of minutes.
Add the water slowly and then simmer.
Meanwhile dry roast the pine nuts in a dry frying pan until they look toasted.
Turn the saucepan down very low until the Quinoa opens up.= about 10mins
Turn the pan off and leave to soak up all the water. Add the toasted Pine nuts and mix.
A very filling and healthy lunch
