Bran Flax Muffins

1 1/2 C. flour (wheat or white) 1 1'2 C. carrots, shredded3/4 C. oat bran 2 apples, peeled & shredded3/4 C. flaxseed meal 1/2 C. raisins1 C. brown sugar 1 C. nuts, chopped2 tsp. baking soda 3/4 C. milk1 tsp. baking powder 2 eggs, beaten1/2 tsp. salt 1 tsp. vanilla2 tsp. cinnamon
Mix together dry ingredients. Stir in carrots, apples, raisins and nuts. Combine milk, beaten eggs, and vanilla. Pour liquid ingredients into dry ingredients until moistened. Do not over mix. Fill muffin cups, 3/4 full. Bake 350 degrees for 15-20 minutes. (yields about 15 muffins) This is really yummy!
