Winter Melon Soup

Ingredients
4 Cup Low Fat Chicken Broth1 Pound Lean Ham4 Half Chicken Breasts (boneless/skinless)1/4 Cup Soy Sauce3 Tablespoons Cooking Wine6 Dried Medium Shitake Mushrooms3 Pounds Winter Melon1 Teaspoon Powdered GingerBlack Pepper To Taste
Directions
Boil chicken breasts til done, about 20 minutes. Shred cooled chicken.
Peel and cut winter melon into chunks
Soak shitake mushrooms to rehydrate; remove stem and cut into strips.
Cut ham into cubes.
Put all ingredients into a large pot and simmer about 30 minutes to 1 hour.
Makes about 8 - 1.5 cup servings
