Greek Salad

Ingredients
1/2 Cup Feta Cheese Crumbed1/2 Cucumber Dicedapprox 10 cherry tomatoes halved1/2 Red Onion finely chopped1 clove garlic crushed.1 Tbsp Dried OreganoJuice 1 fresh lemon1 Tbsp Olive oil1/2 Tsp or pinch of salt1 Tbsp Ground black pepper (I like lots so reduce to taste)
Directions
Chop cucumber, tomatoes and red onion.

Place above in dish with crumbed feta cheese.

Add Oregano, salt and pepper and crushed garlic

Add lemon juice and olive oil.

Mix well. Although ready to eat now best left to marinade for approximately 1/2 hour.

Great on it's own, served with wholemeal pitta, grilled kebabs yum!

    I used fat free crumbled feta and green onions with slivers of spanish onion instead of red (though red is delicious). I used different herbs also, fresh basil is terrific ... (I think I made a different recipe altogether) ... anyway it's good! - 9/10/09
