Sweet-snack Melon

Ingredients
Canteloupe (medium)Lemon HoneyFresh MintLemon-Lime Soda
Directions
Clean the canteloupe and either ball or slice into bite-sized pieces. Place in bowl.

Take small handfull of mint leaves, roll and julienne.

Mix honey, juice from 1/2 lemon, 1 - 2 tsp. lemon zest, and 2-3 tbsp. lemon-lime soda together. Add mint. Pour mixture over canteloupe, toss together, and place in refridgerator to chill.

Serve cold.

**Note: I've never actually measured ingredients for this recipe, so this is just a rough guess. Feel free to use as much as (or as little of) the lemon, mint, honey, and soda as suits your own tastes.

This dish makes for a great, light summer dessert.
