Pistachio Cream Cheese Cookies

1 c. sugar1 c. butter, softened8 oz. cream cheese ( I use the whipped stuff for ease of mixing)1 tsp. vanilla2 1/4 c. flour1 pkg. Jello instant Pistachio Pudding Mix1 tsp. baking powder
Cream sugar, butter, cream cheese, vanilla and egg. Add the remaining ingredients gradually. Refrigerate at least 1 hour.
Preheat oven to 350˚ F. Shape into 1 inch balls and place an inch apart on ungreased or lightly greased cookie sheets. Don't worry about spreading. They don't. They make adorable little green dumplings almost exactly the size you rolled them to.
Bake 9-12 minutes checking often. When they lose the glossy look, take them out immediately and cool them on a rack (or eat them warm with ice cold milk but that enhances their addictive side)
Makes about 5 dozen cookies.
