Ingredients
Jumbo Shells--12 oz boxRicotta Cheese, part skim--1 cupSpinach--10 oz frozen, thawed and drainedParmesan Cheese--0.5 cup gratedEgg Beaters--0.25 cupnutmeg--0.25tsp basil--0.5 Tbsoregano--0.5tsponion powder--1 tspsalt--0.5tspblack pepper--0.5tspMarinara Sauce--3 cupsMozzarella Cheese--1 cup,grated
Directions
Pre-heat oven to 350.
Boil shells until al dente--10 min.
Rinse and drain shells.
Combine spinach, cheeses, egg substitute, and seasonings in a large bowl.
Mix well.
Fill each shell with a heaping tablespoon of spinach-cheese mixture.
Pour about a cup of sauce into a baking dish.
Arrange stuffed shells in dish.
Pour remaining sauce on top--to taste.
Cover with foil and bake for 25min.
Uncover, sprinkle with mozzarella, and bake 5 min. more.
Makes approximately 6 servings of 5 shells each.
