Vegetable Cheese Quesadillas

Ingredients
4 Whole Wheat Tortilla2 TBSP Red Onions, raw, chopped 2 TBSP Green bell peppers, chopped 4 Mushrooms, fresh, chopped1/4 cup Yellow Sweet Corn, Frozen, thawed3 medium Baby Carrots, raw, shredded 1/2 cup Cheddar Cheese, shredded 1/2 cup Mozzarella Cheese, part skim milk, shreddedOptional: 4 Tbsp salsa, 4 Tbsp sour cream (not included in nutritional information)
Directions
Mix veggies together in a small bowl. Mix cheese together in a small bowl. Place tortilla in skillet over medium heat. Add 1/3 cup of veggies and 1/4 cup of cheese to tortilla and fold in half. Repeat for each tortilla. Grill on each side until toasted and cheese is melted throughout. Cut and serve with salsa and/or sour cream.
