Organic Baby Spring Greens12 grape tomatoes, cut in 1/21/2 C Sprouts1/2 C Cilantro1/4 Avocado, diced (avocado helps your body absorb all the of the vitamins etc)1/4 C Jicama1/4 C Purple Cauliflower1/4 C. Freshly cooked beetsI garlic clove, diced teeny tiny1 oz. Kalamata or other olive1/2 Yellow/Red/Orange bell pepper, diced1 T. each sunflower and pumpkin seeds2 T. Chopped Oregon filberts1/4 C. cooked barley or Kashi 1 T. cooked flax seeds2-4 oz. Nitrate free smoked or canned salmon1/4 C. Gruyere or other hard cheeseFor dressing I like 1/2 tsp sesame oil mixed with tarragon vinegar to taste.
I like to cut up some of the vegetables on my day off and put them together. I add the salmon right before I am going to eat it.
