Mushrooms, fresh, half cup, thinly sliced Zucchini, baby, 1 small to medium, thinly slicedOlive Oil, 1 tsp Egg, fresh, 2 extra large Onion, I tablespoon chooped! clove garlic finely chopped
Thinly slice mushrooms zucchini and chop onion and garlic. Put olive oil in non stick pan and heat for a minute. Add these to a bowl and crack the two eggs into the vegetable mixture. Add salt to taste. pour mixture into heated saucepan. set on low heat, cover and simmer for about 5 minutes or until egg is done.
You may serve this with one whole wheat dinner roll with 2 lettuce leaves, half a chopped cucumber and tomato,particularly if taken for dinner.
