Quick oat Applesauce muffins

1 C Quick Oats (1 minute)1 C 1% Milk1 C Whole Wheat Flour1/2 C brown sugar1/2 C unsweetened applesauce2 Egg whites1 tsp baking powder1/2 tsp baking soda1/2 tsp salt1 tsp cinnamon1 tsp sugarraisins or nuts (optional)
Soak oats in milk.
Preheat oven to 400.
Spray muffin pan with cooking spray.
Combine the oat mixture with the applesauce and egg whites, and mix until well combined.
In a separate bowl measure and whisk the dry ingredients together.
Add wet ingredients to dry and mix until just combined. Add nuts or raising if desired.
Do not over mix the batter or the muffins will be tough. Spoon muffin mix into muffin pan
Bake for 20-25 minutes or until done.
Remove from pan, cool, enjoy
These can be frozen and reheated in the microwave for a quick breakfast.
