Grilled salmon with stuffed vegetables

Ingredients
4 oz salmon filet1 lg baby zucchini1 tbls each carrot, celery, onion, red pepper1 clove garlic1/4 C low fat cheddar1/2 C cooked brown ricesalt and pepper
Directions
split and scoop zucchini. mix celery, carrot, onion and pepper with garlic, cheese and rice. season with salt & pepper. stuff zucchini halves and bake in preheated oven @ 400 degrees for 15 minutes. in the mean time grill the salmon over a med-high flame untill cooked thru (10 min)
