Low Carb Mousse

Ingredients
8 ounces, low fat cream cheese or neufchatel1 cup heavy whipping cream1 cup water1 package (4 serving size) sugar-free instant pudding, any flavor
Directions
In a mixer bowl, blend cream cheese until soft and smooth. Add water, while blending, then the pudding mix, then the cream. When it is well blended and creamy, divide into individual serving bowls. I doubled the recipe today and divided it into five very large servings. I expect that to equal about one carb choice (for diabetics - about 15 g carbohydrates) per large serving. I think I could easily be satisfied with half of that amount! This is very rich!
