Indian Curried Shrimp

Ingredients
1 bag (40-60 large) frozen shrimp, thawed2 Tbsp red curry or garam masala1 Tbsp grated ginger2 Tbsp margarine, melted (calorie count uses Brummel and Brown)2 Tbsp coconut, shredded and toasted
Directions
1. Thaw shrimp, remove tails
2. Mix melted margarine, curry/garam masala, and ginger in a bowl
3. Add shrimp to margarine mixture and stir to coat shrimp
4. Saute shrimp on medium heat for 5-6 minutes, until warmed through
5. Sprinkle shrimp with coconut.

Serve over basmati rice (not included in calorie count).
