Lemongrass Chicken Noodles

Ingredients
2 x chicken breast, boned & skinless5 spring onions, chopped1 stem lemongrass, finely chopped3 cloves garlic, crushed1" ginger, grated180ml chicken stock3 tbsp soy saucezest of 1 x lime1/4 tsp dried chilli flakesfresh coriander, chopped200g uncooked egg noodles (unenriched)
Directions
1. Chop chicken into bite size pieces and then
Marinate chicken in the garlic and ginger
puree for about 1 hour.
2. Cook noodles as directed on the packet, drain.
3. Spray pan with 1cal cooking spray.
4. Cook chiken until golden brown, approx 5 mins.
5. Add spring onion and lemongrass, sir fry for 2
mins
6. Add stock, soy sauce, zest and chilli flakes.
7. Simmer until chicken is cooked thro, about 5
mins.
8. Add cooken, drained noodles, stir for 1 min to
heat through. Remove from heat, stir in
chopped coriander and serve.
