Beef and Potato Korma

Ingredients
2 lbs cubed beef2 tbsp olive oil1/2 c chopped onions3/4 can tomato paste1 tbsp cumin2 tbsp curry powder1/2 tbsp salt4 medium potatoes quartered
Directions
Fry onions in oil and when they are golden, add the beef. Once beef is browned, add the tomato paste. Fry a little longer and then add enough boiling water to cover everything. Then add the spices and salt. Let simmer for 1 hour and then add potatoes. Simmer another 30 minutes or until potatoes are done. Serve with Basmati rice.

    Bit high on the sodium. I tried it again with added cinamon stick. Liked it better that way after cutting back on sodium. I have to watch out for it. (High blood pressure) - 3/10/07
