Use leftovers from Allison's Chicken fajitas (cooked chicken, peppers & onions, tomatoes, and cheese) (Leftover black beans optional.)
Heat heavy skillet to medium and spray with Pam spray. Lay whole wheat tortilla on skillet and spread cooked chicken, onions, peppers, tomatoes, leftover black beans (and black olives if you want) over tortilla. Spread with lowfat cheddar cheese. When cheese starts to melt, cover with another whole wheat tortilla, and flip with spatula under (and hold on top) to other side. Crisp on medium, turn off heat and slice into quarters. Arrange on plate. MMMMM good with minimum prep because it was all done the night before! Yesss!
