Chicken with red pesto and mozzarella

4 chicken breasts, no skin1/4 cup sundried tomato pesto1/2 cup fat free mozzarella cheese1/2 cup lemon juice
Line baking tray with aluminium foil and pour on lemon juice (I use this instead of oil to cut cals). Place chicken breasts on foil. Divide pesto between the four breasts, then divide up the cheese on top. Season to taste. Cover tray with foil. Bake in the oven for 20-25 minutes - until chicken is cooked through and cheese melted. Serve with green salad.
