Whole Grain Teff Muffins

Ingredients
1/2 cup of brown sugar3/4 cup teff flour3/4 cup Bob's Red Mill Sweet White Rice Flour1/2 cup arrowroot starch1-1/2 tsp. baking powder1 tsp cinnamon1/4 tsp. salt2 tsp. vanilla2 eggs1/3 cup olive oil2/3 cup water or milk1/2 cup chopped nuts
Directions
Preheat oven to 400 degrees. Grease muffin pan. Combine flours, arrowroot, baking powder, cinnamon, salt and brown sugar. Mix eggs, oil. water(or milk), and vanilla into flour mixture. Add nuts. Fill muffin pans 3/4 full. Bake at 400 degrees for 25 minutes. Yields six large muffins.
