Vegetable Omelette

Ingredients
1 large egg plus 2 egg whites1/4 cup fresh mushrooms1/4 cup green peppers1 TBSP chopped onion1 oz ,part skim,mozzarella cheese1/4 cup salsa (no sugar)dash of salt and peppercooking spray
Directions
Spray frying pan with cooking spray and heat to med low.
Add vegetables and cook until soft.
Put eggs in a bowel and gently stir.Do not make them frothy.
Remove cooked vegetables.
Sray pan with cooking spray again and heat to med low.
Add eggs and swirl to coat frying pan.
Cover with a lid and cook gently for about 2 mins.
Add vegetables on one half of egg mixture.
Sprinkle cheese on top of vegetable mixture.
Cover with lid until cheese melts and eggs look set(1-2 mins).
Lift lid and carefully flip the egg over the vegetable mixture and cheese.
Put on a plate and cover with salsa.

    Excellent and tasty. Made it for dinner using fresh chopped tomatoes instead of the salsa and subsituted low fat swiss for the cheese which gave it a little 'zing'. Would definitely make again. - 4/6/07
