Tofu Salad Sandwich

Ingredients
1/2 lb firm tofu, drained and cubed 1/4 cup mayonnaise 1/2 tablespoon Dijon mustard 1/8 teaspoon paprika 1/8 teaspoon turmeric 1/4 cup celery, finely chopped 1/8 cup red onion, finely chopped whole wheat bread, slices or pita pockets lettuce
Directions
Mix mayo, mustard, paprika, and turmeric in a bowl.

Add celery, onions, and tofu. Mix and be sure tofu is coated with mayo mixture. Add a dash of pepper to season.

Serve on slices of whole wheat bread with lettuce or in pita pockets.
