Panera's Cream Cheese Potato Soup

4 c. chicken broth4 c. diced potatoes, peeled1/4 c. minced raw onion1/2 tsp. seasoned salt1/4 tsp. white pepper1/4 tsp. ground red pepper8 oz. neufchatel cheese
Combine broth, potatoes, onions, and seasonings. Boil until potatoes are tender. Mash the potatoes slightly to release starch for thickening. Reduce heat to low and add cream cheese. Heat stirring frequently until cheese melts.
