Panera's Cream Cheese Potato Soup

Ingredients
4 c. chicken broth4 c. diced potatoes, peeled1/4 c. minced raw onion1/2 tsp. seasoned salt1/4 tsp. white pepper1/4 tsp. ground red pepper8 oz. neufchatel cheese
Directions
Combine broth, potatoes, onions, and seasonings. Boil until potatoes are tender. Mash the potatoes slightly to release starch for thickening. Reduce heat to low and add cream cheese. Heat stirring frequently until cheese melts.

    We made this recipe today, we did, however, make some modifications. For example, we used low sodium broth and fat free cream cheese(which melted & thickened the soup just fine), plus we added some sliced carrots, mushrooms and wild rice.....it is so yummy! - 2/11/10
