Coconut crusted salmon with curry butter

Ingredients: Pink Salmon (fish), 4 oz (remove)Coconut, sweetened, 0.5 cup Curry powder, 2 tbspBread crumbs, dry, grated, plain, 1 cup Softened Butter, salted, 0.5 stickCurry powder,Salt, Pepper, black, olive oil
Pre heat oven to 350 degrees.Combine curry powder, coconut, and breads crumbs in a bowl add enough olive oil to moisten and season with salt and pepper. Soften butter and add curry and salt and pepper to taste.Pre heat a skillet on medium high heat. Season salmon with salt and pepper. Sear salmon in 1 tbsp. olive oil in hot skillet for 2 min on a side. remove from heat and place on a cookie sheet. Top each filet with the coconut mixture. Bake for 8-10 min or until desired doneness. Remove from oven and top each filet with butter mixture. Enjoy!
