Crepes (French Pancakes)

Ingredients
one cup flour 1/2 tsp salt 4 eggs (or 1 cup egg beaters) 3 TBSP powdered sugar 1 cup milk 1/2 cup water
Directions
Place all ingredients in a blender. Mix quickly. Let sit in the fridge for one hour (to let bubbles escape). Heat a crepe pan or nonstick skillet. butter the pan. Pour 1/4 cup batter into pan and swirl to coat the bottom of pan. Flip crepe after about one minute. Let cook on second side for 10-15 seconds. Remove crepe and keep warm while cooking the others. This recipe can easily be doubled for a crowd, or halved for fewer servings.

    Yum! I used honey instead of sugar and used 2 850g eggs instead of 4 and skim milk and left the salt out, it still tastes like I remembered when I was a kid! Yum! - 8/27/12

    Delicious! First attempt at crepes =success! I filled with homemade no-sugar applesauce and Yoplait 100 vanilla Greek yogurt. Kids loved it! Top with a dollop of the Greek yogurt and drizzle a tiny bit of caramel syrup over it -yum! Also, I substituted Splenda for the powdered sugar. - 1/23/13

    I used non-stick PAM Butter flavor spray to replace the butter and I omitted the powdered sugar because I was going to be putting a strawberry syrup on top and it would be sweet enough. I also sixthed the recipe (because I cook single meals and don't need the temptation). They turned out great! - 11/8/10

    I thank carbs are to high, but if I controll the sugar amount by sprinkling it on top , that will help lower some of the carbs. - 5/11/10

    I thought they were great! I halved the recipe and didn't add the sugar, but sprinkled some on top. I will add more water next time so they are even thinner - I made them to go with a potato soup recipe. Will make again! - 12/23/09
