Oatmeal Coconut Cookies

Ingredients
2 c. Light Brown Sugar, packed2 large eggs2 TBSP Vanilla extract2 sticks butter or margarine, softened1 3/4 c. flour1 tsp baking soda1 tsp ground cinnamon1/2 tsp salt3 c. quick oats1 c. coconut
Directions
Makes about 60 cookies with a regular sized cookie scoop.

Preheat to 375.
Beat brown sugar, butter, eggs and vanilla until mixed well. Add flour, baking soda, cinnamon and salt - beat until mixed well. Add oats and coconut, stir throughout with a wooden spoon.

I use a cookie scoop to place cookies about 2 inches apart from one another on a cookie sheet. Bake 8-10 minutes. Let cool 1-2 minutes on sheet, then move to cooling rack.
