Palak (Indian spinach)

Ingredients
1.5 tbsp olive oil1 tsp fenugreek seeds 2 tsp ginger garlic paste.5 tsp red green chillies1 tsp ground coriander.5 tsp ground cumin .5 tsp turmeric powder.5 tsp salt1 large onion, sliced1 10 oz, package frozen spinach
Directions
Heat oil in pot and add fenugreek seeds. When seeds turn light brown turn down heat then add all the spices. Let spices sizzle for a couple of minutes then add sliced onions and spinach. Cover and let spinach thaw. Turn up heat to med-hi and stir. Cook covered until all moisture has evaporated.
Serve warm with roti.
