Seven Layer Vegetable Salad

Ingredients
1 head lettuce, chopped16 ounces baby spinach, chopped1 pound bacon, crisply cooked and crumbled1 bunch green onions, chopped10 oz package frozen peas, thawed8 hard-boiled eggs, peeled and chopped1 cup fat-free sour cream1 cup reduced-fat mayonnaise1 oz package ranch salad dressing mix
Directions
Layer lettuce, spinach, bacon, peas, onions, and eggs in a 13x9 dish. Mix together sour ream, mayonnaise and salad dresssing mix; spread over salad. Serves 12.

Garnish with olives if desired.

    use turkey bacon for less calories and half pound instead of full pound, use greek yogurt or fat free mayo............. remember this salad makes 12 servings too - 12/23/20

    Yikes, yup, the nutritional info is WAY OFF. It's only counting the bacon and iceberg lettuce. I wondered how it was so low with bacon and so much sour cream and mayo... still sounds good though! I'm going to MAKEOVER it and see. - 8/7/12
