Chili tortilla pie

Ingredients
2 Whole Wheat Tortilla1 cup spicy homemade vegetarian (or any) chili1 cup leftover cooked veggies, chopped small4 eggs or 1 cup liquid egg substitute1/2 cup skim milk or light plain soymilk3 T shredded low fat extra sharp cheddar4 to 6 crumbled tortilla chips
Directions
Blend the leftover chili, chopped veggies, eggs and milk together. If your chili isn't spicy or flavorful enough this is the time to add an extra pinch of cayenne, cumin, garlic salt or whatever it needs. Lay a tortilla in the pan, pour most of the mixture over it. Place 2nd tortilla and moisten with the rest of the mixture, top with cheese and crumbled chips. Microwave for 10-12 minutes or until it puffs up and is set. Makes 6 generous servings.
