Ingredients
1 LARGE CHICKEN BREAST 8OZ3 TBSP ONION & CHIVE WHIPPED CREAM CHEESE2 SLICES OF BACON
Directions
POUND CHICKEN BREAST TO 1/2" THICKNESS SPREAD CREAM CHEESE ON CHICKEN BREAST. ROLL CHICKEN BREAST THEN WRAP BACON AROUND ROLLED BREAST PLACE IN GREASED BAKING DISH SEAM SIDE DOWN. BAKE @ 400 DEGREES FOR ABOUT 35 MINUTES UNTIL JUICES RUN CLEAR. THEN BROIL FOR 5 MINUTES 6 INCHES FROM HEAT TO CRISP BACON.

    This was very good, very moist and cooked perfectly. Both my children said "You can make this again Mom"! : ) I will try variations with the cream cheese filling by keeping the cream cheese (or another creamy cheese) and adding different herbs. It's a keeper that I will proudly serve to company. - 3/4/13

    This is a recipe I'll be making again and again! I also used Laughing Cow cheese and added spinach. It needs no other seasoning, looks beautiful and tastes fantastic. 35 minutes was the perfect baking time and I decided not to broil the bacon and it was still great! - 3/13/12

    This was very good-- I added some fresh chopped spinach to the stuffing which added a little more flavor and color. Next time I think I will add some chopped red onion for a bit more flavor. I'll make this again for sure. - 4/29/09
