Crackling Cauliflower Stir-fry

1 medium cauliflower, cut into small florets1 TBSP ghee or coconut oil2-3 cloves of garlic, minced1/2 inch fresh ginger, cut into tiny slivers1 or 2 fresh jalepenos, seeds and ribs removed, cut into thin slivers1/2 tsp cumin seed1/2 tsp mustard seed1/4 tsp cayenne pepper1-2 tsp garam masala1 tsp salt1/4 to 1/2 cup water
Melt oil or ghee in a wok or deep saute pan on medium high heat. Add cumin and mustard seeds. When mustard seeds start to pop, add the garlic, ginger, jalepeno peppers and cauliflower. Stir-fry for 5-7 minutes stirring occassionally to keep spices from burning, but not too much because you want the cauliflower to get very brown on the edges. Add the garam masala, cayenne pepper and salt. Cook for one more minute, stirring constantly. Add 1/4 cup of the water and immediately cover with lid. Let steam for 2-3 minutes, adding remaining water if necessary to keep from burning. Remove lid, let water evaporate and adjust seasonings. Serve with brown rice for a complete protein.
