Shrimp Bisque

1 1/2 lb Shrimp1/3 cup Olive Oil3 cloves Garlic, minced1/3 cup Onions, chopped3 cups Chicken Broth3 tbsp Basil, chopped 1 can Tomato Paste1 can Tomato Sauce1 cup Heavy Whipping Cream1 cup Sour Cream
1. Place garlic and onion in food processor. Blend until finely chopped.
2. Heat olive oil in large heavy saucepan. Cook garlic and onions 5 or 6 minutes or until transparent, do not allow to brown.
3. Whisk in tomato sauce, tomato juice. Simmer an additional 10 minutes.
4. Whisk in cream and bring back to simmer. Skim froth if any.
5. Meanwhile steam or sauté shrimp until pink, 3 or 4 minutes.
6. Place a little of the soup and all but 8 shrimp in a food processor and blend into a paste. Fold ground shrimp into bisque mixture.
7. Season with Basil, salt, and pepper.
8. Place in bowls. Float one shrimp on top of each bowl.
