Chile Relleno Quiche

Ingredients
1 1/2 cups egg beaters3 cups fat-free cottage cheese20 crushed, reduced-fat ritz crackers8 oz. diced green chiles, drained3/4 cup low-fat shredded cheddar cheesesalt and pepper to tastcooking sprayfat-free sour creamsalsa
Directions
Preheat oven to 350 degrees. Combine egg beaters, salt, pepper and cottage cheese in a large bowl and mix well. Add half the shredded cheese, green chiles and crushed Ritz crackers to the bowl and mix until well combined. Spray 10x6 inch baking dish with cooking spray. Pour egg beater mixture into baking dish and bake at 350 for 45 minutes or until center is set and firm. Add the remainder of the shredded cheese to the top and bake an additional 5 minutes or until cheese is melted. Cut into 6 equal servings and top with sour cream and salsa. (Garlic and lime salsa is very good with this)
